I am always on the lookout for breakfast recipes, although Little Foodie will on the very rare occasion eat boxed cereals she much prefers homemade breakfast foods. I always have lots of oats on hand so this was the perfect recipe for a cold winter morning. I adapted the recipe from one found on allrecipes.com. Enjoy!!
- 3 cups rolled oats
- 1/2 cup brown sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 2 eggs (if you want to cut the fat use only the egg whites)
- 1/2 cup melted butter (or you can use applesauce)
- 2 teaspoons vanilla extract
- 1/2 cup raisins
- 1/2 cup walnuts
- 1/2 cup shredded coconut
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in raisins, walnuts and coconut. Spread into a 9x13 inch baking dish.
- Bake in preheated oven for 40 minutes.
